In 1906 I went to the Arctic with the food tastes and beliefs of the average American. By 1918, after eleven years as an Eskimo among Eskimos, I had learned things which caused me to shed most of those beliefs. Ten years later I began to realize that what I had learned was going to influence materially the sciences of medicine and dietetics. However, what finally impressed the scientists and converted many during the last two or three years, was a series of confirmatory experiments upon myself and a colleague performed at Bellevue Hospital, New York City, under the supervision of a committee representing several universities and other organizations.

Not so long ago the following dietetic beliefs were common: To be healthy you need a varied diet, composed of elements from both the animal and vegetable kingdoms. You got tired of and eventually felt a revulsion against things if you had to eat them often. This latter belief was supported by stories of people who through force of circumstances had been compelled, for instance, to live for two weeks on sardines and crackers and who, according to the stories, had sworn that so long as they lived they never would touch sardines again. The Southerners had it that nobody can eat a quail a day for thirty days.

There were subsidiary dietetic views. It was desirable to eat fruits and vegetables, including nuts and coarse grains. The less meat you ate the better for you. If you ate a good deal of it, you would develop rheumatism, hardening of the arteries, and high blood pressure, with a tendency to breakdown of the kidneys - in short, premature old age. An extreme variant had it that you would live more healthy, happily, and longer if you became a vegetarian.

Yesterday I recommended eating about a pound a week of salmon or sardines as part of the strategy for achieving an optimal omega-6 to omega-3 ratio.

Yet this is not the way many health-conscious people obtain omega-3 fatty acids. They buy fish oil capsules.

The trouble with this approach is that omega-3 fats are chemically fragile: their carbon double bonds are easily oxidized. EPA has 5 double bonds and DHA 6 double bonds, so they are the most vulnerable of all dietary fats. They easily become rancid.

Fish oil capsules often sit on a shelf for months before they are eaten. If someone offered you the opportunity to eat salmon that had been sitting on a shelf for six months, would you do it? No? Then why accept the same deal with salmon oil?

In fact, clinical trials have compared eating fish to eating fish oil capsules. Fish consumption has an excellent record in a number of clinical trials, but fish oil capsule supplements do not.

In the Diet and Angina Randomized Trial (DART-2), 3114 men with stable angina were followed for 3-9 years. There was a control group, a group advised to eat oily fish like salmon, and a group taking 3 fish oil capsules daily. There was a significant increase in sudden cardiac death among the subgroup taking fish oil capsules. [1]

So, give up the fish oil capsules: they’re all too likely to poison you. Instead, buy some fresh fish. Poached or baked salmon is an excellent summer dinner.

This is going to be a long article and I know not everyone will have time to read it. So I’m going to summarize the key points right up front because I think this information is so important:

  • Selenium protects against mercury toxicity, and 16 of the 25 highest dietary sources of selenium are ocean fish
  • If a fish contains higher levels of selenium than mercury, it is safe to eat
  • Most species of commonly eaten fish in the U.S. have more selenium than mercury
  • Fish are not significant sources of PCBs and dioxins when compared to meat, dairy or vegetables
  • The benefits of eating fish regularly far outweigh the potential risks, which are neglible
  • Pregnant mothers and young children should eat 2-3 servings of oily ocean fish each week
These days a lot of people are scared to eat fish. They’ve been told that fish are full of contaminants like mercury, PCBs and dioxins that cause neurological problems and may increase the risk of cancer. Pregnant women have been especially warned due to the supposed risk of these toxins to the developing fetus.
