Matt Stone of 180 Degree Health starts with this Ray Peat quote before discussing Ray's insights based on the work of Brod Barnes:

He did solve much of ‘the riddle of heart attacks,’ but recent statements by the Heart Association show that the dominant forces in the health business haven’t learned anything at all from his work, which he began 50 years ago.

I didn’t want to give up on the Ray Peat topic altogether now. There is still a lot to be said. In fact, his lengthy article titled “Glycemia, Starch, and Sugar in context” is a perfect article to deconstruct. It is full of many of Peat’s main philosophies about stress hormones, blood sugar regulation, metabolism, gelatin, polyunsaturated fat – you name it. It’s all there in that article. And it’s the perfect article to examine because some of it is great, and some of it is downright silly. It’s a great blend. In fact, it will probably take many posts to break this single article down – but once we are through most of you will have a pretty good idea about Ray Peat, and also will be left, hopefully, with a balanced view of him as a researcher (which is something few can claim – most either think he is a total wacko or is like the Messiah of nutrition).

I will not put every paragraph in the article under the microscope, but we will start with a few that I have selected to discuss and keep the conversation going for a while. In so doing, hopefully we’ll get somewhere. Begin! (spoken in the tone of the original Mortal Kombat video game).

“Judging by present and past statements of the American Dietetic Association, I think some kind of institutional brain defect might account for their recommendations. Although the dietetic association now feebly acknowledges that sugars don't raise the blood sugar more quickly than starches do, they can't get away from their absurd old recommendations, which were never scientifically justified: “Eat more starches, such as bread, cereal, and starchy vegetables--6 servings a day or more. Start the day with cold (dry) cereal with nonfat/skim milk or a bagel with one teaspoon of jelly/jam. Put starch center stage--pasta with tomato sauce, baked potato with chili, rice and stir-fried beef and vegetables. Add cooked black beans, corn, or garbanzo beans (chickpeas) to salads or casseroles.”

Peat, in his disdain for mainstream nutrition beliefs, is poking fun at the dietary recommendation to base the diet primarily around starches and not simple sugars. Of course, these recommendations were based on widely held but later discovered-to-be-mistaken beliefs that complex carbohydrates – like grains, potatoes, corn, and beans, digested more slowly than simple sugars comprised of less “complex” molecules. It had been known for ages that these foods generally led to more stable blood glucose levels (measured over a 6-hour time period as opposed to just basing everything off of what happens in the first half hour), and were great preventatives against hypoglycemia unlike the foods listed by early anti-sugar author E.M. Abrahamson (1951) who gave the following prescription for those prone to hypoglycemia, “no sugar, candy, or other sweets, no cake with icing, no pies or other pastry, no ice cream, no honey, no syrup, no grape juice or prune juice. And regrettably, our string of ‘no’s’ includes cocktails, wines, cordials, and beer. Finally, if you have hyperinsulinism, you must avoid caffeine as you would the pest.”

Of course, there are many diseases including hereditary fructose intolerance and various glycogen storage diseases in which starch is a completely safe food to eat, but the ingestion of any of the foods listed by Abrahamson containing simple sugars can cause life-threatening bouts of hypoglycemia. This has nothing to do with the absorption rate of the carbohydrates, and in my experience the absorption rate of the carbohydrates has nothing to do with a food’s ability to trigger hypoglycemia. Quite simply, absorption rate or “glycemic index” of foods or the insulin spike after eating rapidly-absorbed starches has nothing to do with hypoglycemia. Thinking that it does is just another pseudoscientific sasquatch.

Thinking that such recommendations were made due to some brain defect is even more offensive, as many of the mantras of mainstream nutrition are based on the pioneering work of Denis Burkitt, Hugh Trowell, T.L. Cleave, and others who spent time in Africa gathering hard data on the rates, or absence I should say, of many cancers, heart disease, diabetes, obesity, constipation, hemorrhoids, varicose veins, appendicitis, diverticulosis, and many others on diets built around starchy agricultural staples – notably whole grains, corn, root vegetables, and the like. It’s not like these beliefs were pulled out of thin air as part of some government propaganda machine. And as Burkitt witnessed, the more food that was displaced with whole grains and tubers, the lower the fasting glucose level of the population.

"The Dietetic Association's association with General Mills, the breakfast cereal empire, (and Kellog, Nabisco, and many other food industry giants) might have something to do with their starchy opinions. Starch-grain embolisms can cause brain damage, but major money can also make people say stupid things."

These food companies make more money the more high-fructose corn syrup and vegetable oil they manage to squeeze into the food, as these are generally much cheaper calories than those in villainous grains or potatoes (although they are still plenty cheap). More importantly, the more fat and extra sweet HFCS in the product, the more of it consumers buy and eat because sugar – particularly high-fructose corn syrup because it is sweeter, and fat, are more stimulating than starch, generally-speaking (although there are plenty of people that get more riled up about chips, Cheez-its, and baguettes than sugar-laden sweets). To think that such companies are behind some massive scheme to steer people towards vile corn and potatoes and away from wholesome simple sugar is comical to put it lightly.

"In an old experiment, a rat was tube-fed ten grams of corn-starch paste, and then anesthetized. Ten minutes after the massive tube feeding, the professor told the students to find how far the starch had moved along the alimentary canal. No trace of the white paste could be found, demonstrating the speed with which starch can be digested and absorbed. The very rapid rise of blood sugar stimulates massive release of insulin, and rapidly converts much of the carbohydrate into fat."

I smell more sasquatch here. In fact, the smell is so strong the John Lithgow is outside my window shouting the name “Harry” over and over. Jack Black and Kyle Gass are here with a bottle of aerosol Trap B Gone and are setting up a drumset as we speak. Sasquatch’s “drumming is kickass” they tell me.


Insulin converting carbohydrate into fat? That’s not how insulin works at all. In fact, a solid debunking took place a couple months back at http://www.carbsanity.blogspot.com/ in which it was shown that the body is in negative fat balance (burning more fat than storing) during postprandial insulin spikes – like the kind you get after having some good old corn starch. On top of that, the easiest carbohydrate to convert to fat has been shown time and time and time and time and time again to be the one that travels to the liver and is digested most slowly. It’s called fructose. Not only does the presence of fat make fat storage easier, if fructose is converted to fat in the liver (which it can be under certain circumstances) it increases insulin resistance, which can lead to increased fat storage (insulin lowers appetite and increases metabolic rate, so becoming unresponsive to the hormone has a tendency to increase appetite and reduce metabolic rate).

Insulin is also intricately tied to leptin, the master hormone of managing the calories in/calories out equation. Surges in insulin cause surges in leptin, which lowers appetite and increases the metabolic rate. Stating that making insulin rise leads to becoming fat is a complete misrepresentation of the bigger picture. In fact, starch-based diets usually lower appetite dramatically, and many starchy foods like potatoes and oats are known to satisfy the appetite on fewer calories than just about any foods known (higher “satiety index”).

Speaking of corn starch specifically, this has actually been used successfully by Francine Kauffman of the American Diabetes Association in the prevention of early morning hypoglycemia in diabetics – more evidence that absorption rate is not the prime determinant of whether or not a particular carbohydrate goes on to trigger hypoglycemia and general blood glucose dysregulation.

Anyway, don’t get the wrong idea here. I’ve been eating simple sugars in favor of starches myself for many months now and have noticed some apparent benefits. Many seem to do better with sugars than starches for keeping hands and feet warm, producing more energy, getting better sleep – probably due to enhanced liver glycogen storage, and so forth. Many fare better from a digestive standpoint on fruit, juice, and sugar than more complex carbohydrate molecules. Some even report a lowering of appetite on sugar vs. starches, especially with the consumption of whole fruits which, like most starchy staples, are very high satiety index foods. Fruit is also generally more nutritious and hypoallergenic.

So be open to either, or a combination of the two. It’s up to everyone to experiment for themselves to see what the relative benefits and drawbacks of the two basic types of carbohydrates are. But the point here is to shoot down Peat’s wacky and erroneous biochemical justification of the outright superiority of sugar over starch. There is not a clear cut right or wrong carbohydrate, and the mainstream belief that “complex” carbohydrates are superior to simple sugars is not the result of a governmental or agribusiness conspiracy.

In the next episode, we will continue looking closer at Ray’s cookie-cutter and false portrayal of insulin as being a hormone that, if driven up, will drive blood sugar down and cause hypoglycemia. Don’t worry, Ray’s got some tremendous gems in this article as well, as he is one of the few that actually does have some understanding of type 2 diabetes, realizes that it is a shortage, not a surplus of glucose at the cellular level, and so on.

Matt is the subtle attention-shy guy who poses shirtless holding a pig’s head on his blog.
Matt doesn’t really need any attention from me, he is busy commenting in a “contrarian” fashion all over the blogosphere right now. However, enough readers are asking me what I think that I should say something, I suppose.

Jeff writes regarding Matt Stone's guest post on Tom Naughton's blog re colton osborn's question- i just went over and read the post at the link. i think the key section is:
And therein lies the true danger of uber-low-carbohydrate diets. All my experience tells me that, the first few years aside, a low-carbohydrate diet and certainly a full-blown ketogenic diet exacerbates a low metabolism. It is not a matter of having a genetically-doomed dysfunctional thyroid gland; it is fixable, and it lies at the core of the health problems we’ve seen explode over the last century. This is why all prolonged restricted diets, low-carb included, in the words of Robert Atkins himself (from page 303 of Dr. Atkins’ New Diet Revolution):
“…tend to shut down thyroid function. This is usually not a problem with the thyroid gland but with the liver, which fails to convert T4 into the more active thyroid principle, T3. The diagnosis is made on clinical grounds with the presence of fatigue, sluggishness, dry skin, coarse or falling hair, an elevation in cholesterol, or a low body temperature.”
To that I will add constipation, bad moods, heartburn, cold hands and feet, and a whole host of other minor but significant health problems. To get an idea of how “shutting down the thyroid” can manifest, Mark Starr’s chapter on Hypothyroidism symptoms is 83 pages long.
Jeff here- most of what is in the post is fully compatible with PaNu. But Matt Stone asserts that once you've been on zero carb or very low carb for a while [several years] you'll run into problems as specified above. The carbs he recommends sound like potatoes and rice, not clear what he thinks about whole grains, but the bottom line question seems to be about thyroid function over the long term.  I read the post and it starts out reasonably. Matt's hyping a pseudo -contrarian position that has some truth to it, but reading him later he goes off the rails when he starts talking about cortisol and thyroid function.

His first target is really a straw man. PaNu, Wholehealthsource and Peter at Hyperlipid all target fructose and linoleic acid as the main causes of metabolic disturbance in the western diet. Even Gary Taubes in his recent lectures has said "it may indeed all be fructose". None of us, read carefully, claims that "carbohydrates = disease".

His observation that some people may not feel good, even "hypometabolic" on VLC I don't take issue with. It seems like common sense that you might feel better eating more or less of just about anything. As long as you are avoiding the neolithic agents, tinker away! (That's for Brett and Nassim)
My blog with 60 or so main posts and pushing 3000 comments does not have any content from me prescribing precise ratios of anything, except for when advising how to lose weight. I respect the Optimal diet and Peter but I think any tightly defined macro ratio is rather artificial, including Kwasniewski's. I am sure that bias shows in my irritation at the bodybuilding questions : )

At the same time, Stone's statement that long term ketogenic eating per se ruins your metabolism is much less supportable than the "all carbs are metabolic poison" straw man he is attacking. Again, even Taubes does not really say this in GCBC.

My own view on the ratio of carbs in the diet should be pretty clear by now.

1) I think a wide range is tolerable for those with normal metabolism. For those about to ask "how wide" - OK, let's say 5% to 40% or even more if you can tolerate it and the rest of your food is very high quality. If your metabolism is damaged (you know who you are - type II or obesity prone) or you don't tolerate starches well like me, you should probably stay on the low end of carb intake. 

2) I think the paleolithic principle itself argues against LC and VLC being damaging the same way it argues against plants and all carbs as being poison. It just makes no sense, as it implies that humans in any given econiche, even one rich in a huge variety of animal foods, would have been at risk of metabolic damage from being in long term mild ketosis if they were not able to find enough starchy tubers and fruit in season. (We've agreed that grains like white rice are a recent food, I hope).
Enough nonstarchy greens to choke a gorilla with an otherwise all animal diet will not keep you totally out of ketosis, I guarantee. If it did, I wouldn't want to share your bathroom.
Of course, you can start eating a lot of coconuts like the Tokelauans or Kitavans and you can elevate your B-hydroxybutyrate even with a normal carb intake. Uh-oh - now our thyroid glands will die!

3) I suppose it is a corollary of my own paleo principle that I don't like approaches that require "seeking" behavior for something that provides only calories. "I'd better eat some carbs or my thyroid and adrenal glands will be screwed up". Really? HGs had to consciously think about whether they were getting enough starch? Or is starch just something that we eat because it helps us not starve? 

4) On the other hand, avoidance behavior is totally compatible with the paleolithic principle. "Avoid that, as it is outside of our evolutionary experience or causes metabolic effects that are outside our experience in the amounts that are available". This is my template. Fructose, wheat and excess linoleic acid.

5) It is true that being in negative energy balance – losing weight -generates an energy conserving response. That is not surprising. Once you are at equilibrium though, does a lower free T3 with normal TSH and T4 on lower carbs mean something pathologic? What if you had cold hands and a low basal temperature when even you ate 50% of calories as carbs? Are you now supposed to go from 10% to 70% to "restart your thyroid" or are you rather still hypothyroid because you have always been hypothyroid and you are just no longer euphoric now that you have stopped losing weight? Remembering your mood or body sensations one hour ago is hard enough. We are supposed to remember what they were years ago?

6) In answer to the idea that we need to carefully regulate macronutrient ratios to control the function of our thyroid and adrenal glands I have only one comment for now:
Lacks biological and evolutionary plausibility.

To summarize, Matt is a clever and entertaining writer, but his main target is a straw man, as most of the science oriented paleonutrition blogs are not really "low carb" blogs at all. His observation that starch per se need not be unhealthy is not really that controversial.

Matt's claims about his own serum BG after meals should be published as a case report in a medical journal. They are at odds with clinical studies I have read on glucose metabolism in normal highly insulin sensitive young people (can you say "superhuman"?).

Matt's got some good observations, but is over or mis-interpreting the literature in the realm of endocrinology. I did not notice if he has any medical or scientific credentials, but his views of hormonal action lack nuance, to say the least. He is also avidly mining the "I feel like shite, it must be my thyroid or adrenal glands" meme.

After finding low-carb paleo diet to be perfect for me and my lifestyle I am so dissapointed to hear Matt Stone at 180-degree health refute what I beleive. Stone use to be low-carb paleo and suffered several health problems and talks about his client with the lowest body temperature being a guy after he went LC paleo. I understand people gaining weight after stopping LC paleo bc I beleive they shouldnt be eating foods that aren't LC paleo. But Stone says LC paleo ruins metabolisms. What do you think?

If you know anything about Peat, know that he has a vendetta against polyunsaturated fat – which could very well be his greatest scientific contribution because of the numerous negative actions that excessive polyunsaturated fat intake exerts on human tissues, organs, and glands like the wondrous thyroid.

just want to say some something about high starch diet. after general matt stone/ray peat eating for 1 and half years i noticed i lost some fat eating less fat and more potatoes. so i went all out for almost entirely potato diet with a once or twice a week fat and protein meal. i lost 30 pounds in a few months (180 > 150) eating as much potatoes as i wanted and doing no exercise, barely any walking. all of which looks like fat. i look bigger and more muscular now than i did before. anyway i'm just saying that very high starch with occasional lump of meat won't strip the muscle off you as long as its potatoes or something. and my body, haha. temp goes back forth from 97.7 to 98.7 all day. i'm warm and its low, i'm cold and its high. all my life. must have no fucking adrenals. hopefully a ton of pregnenolone will do something, nothing else has ;(

i usually ate them baked, with salt and cheese, 30-50g fat total, 400-600g starch and the potatoes gave me around 40-60g protein and some from the cheese. it doesn't exactly stick to the ribs so you will be hungry often. you want to have good potatoes and a variety is even better. just 2 here in ireland ;( i'm eating normally again, lots of coconut oil, gelatin, milk and of course still potatoes, and my weight hasn't increased. i don't think i feel any different eating each diet.

Leptin decreases the preference for carbohydrate. They've shown this again and again. It increases lipolysis, the free fatty acids spare glucose in some cells by competing with glucose for oxidation, the ketones spare glucose in other places. The major purpose of leptin seems to be to allow the body to survive in fasting condition, which is basically low carb. It's built right into the system. If you want to see leptin resistance, eat lots of carbs. Your leptin goes up, while free fatty acids and ketones go down. That's leptin resistance. Lots of leptin, not doing much. I've become very skeptical of leptin refeeds.

If a person didn't eat a lot of carbs, but was still leptin resistant, I would guess at the same basic cause; no shortage of glucose. This time, produced in-house.

I was looking at a Kekwick and Pawan study today.

Of particular interest is the effect of a 1000 kcal diet providing 90 percent of the calories as fat on the metabolic pattern of obese patients.

Non-obese subjects, after a few days on this diet, develop marked ketonaemia, ketonuria, hypoglycaemia and negative nitrogen balance; the obese exhibit little or no ketosis, maintain blood-sugar and plasma bicarbonate values within normal limits, show little protein loss (as judged by nitrogen balance), and appear to tolerate the diet without undue discomfort for at least a few weeks

Free fatty acids can't be stored as triglyceride in fat cells without glucose. If glucose needs sparing, maybe the body will "waste" fat to provide ketones, as well as glycerol for gluconeogenesis?

Maybe omega 6 messes all this up. That's entirely beside the point. (Omega 3 raises leptin. I'm not sure whether this is a good thing, anymore.)

Matt should leave Jimmy the heck alone. Sorry for the strong language. :nono:

I think Matt Stone might be bipolar stuck in a manic phase.

Let's see, every new piece of information fits into your Grand Unified Theory of Nutrition; you marvel at your luck as every study you come across is just the bit of information you needed. Clearly you are right; if you have the right perspective, it will explain everything, your vision will be clearer than that of anybody else. This was me, about a week ago (but multiply by about five or six.) My processing speed surpassed the speed of skepticism, my filters were off. That's what it feels like in retrospect, anyways.

A week of one person eating low carb, another eating vegan, measuring blood glucose levels the whole time seems to have given Matt the perspective he needed to write an e-book about diabetes. I think maybe you're right, NancyLC. Something ain't right.

I appreciate Matt's.... enthusiasm. Of course, he seems very immature much of the time, and much of his enthusiasm is like the football player leaping on the short guys in the school hallway for the entertainment of himself and others.

Since I don't know that anybody has all the answers for every possible body, I remain open to the idea that he might be right about something. On the other hand if he is, it's mostly from reading not expertise; everyone, of course, has the right to an opinion, it's just that few consider their own opinion so monumentally important as he does. ;-)

From the point of view of any human being with a shred of self respect, a public post about a very public figure in the field, suggesting that he is essentially pathetic, is as bad or worse than if he'd just cussed him baldly. Worse in several ways. WTF did Jimmy Moore ever do to him? We all beat up on Jimmy regularly for every small thing (quit eating frankenfoods!), but that's not the same as the mean-spirited attack MS provides.

It's a sort of "patronizing arrogance" that I actually think I dislike more than almost any other combination of qualities in a human. Which makes me biased in favor of pretty much any other party in any debate -- personally, whether or not I might be intellectually -- so I can't argue the details...

Each of these techniques or diets relies upon one thing – and that is a rise in catecholamines. Catecholamines collectively refer to the stimulatory adrenal hormones – mostly epinephrine and norepinephrine. It was awesome. I thought I was Superman.

Good stuff here. When I was low carb, I was so jacked up that I barely slept 5 hours a night and could literally feel my heart beating through my chest (not by putting my hand there, but I could just feel it beating it was beating so hard). HED definitely tends to increase peripheral circulation, and makes people feel warmer. However, the systems responsible for more efficient cooling during hot weather also perform better if you are able to improve your overall health. 

But it's not always so black and white. Aurora has a warmer body temperature than I do, yet she sleeps with blankets and I sleep without them. I feel much warmer than she does, even though I'm not. 

With sufficient carbohydrate intake, Paleo can make your dreams come true. Too low in carbs and you'll be lucky to dream at all - or sleep for that matter, if you are anything like me.

Rather, it’s taking a timeout to heal up before you try to move forward – especially when it comes to making attempts to improve your body composition.

Having said that, there will a considerable amount of focus coming up this summer on body composition, and how the effective strategies used for losing body fat (low-carb, IF, exercise, etc.) can be used in a way that potentially avoids the pitfalls or the dead ends of just simply “going on a low-carb diet” or “exercising a bunch.”


A quick summary of those that have the best results reveals a theme emerging almost immediately – losing body fat must be done by raising the catecholamines. However, to keep your body from adapting to the surge in catecholamines,
you MUST NOT be in weight loss mode 7 days per week. That’s why it’s the half-time dieters that manage to lose fat without (as much) negative consequence.
Part-time dieters can be filed into four basic categories…
1) Carb Cyclers
2) Re-Feeders
3) Intermittent Fasters
4) Exercisers

With
carb cycling, you lose fat with a big rise in catecholamines while low in carbohydrates – then you eat tons of carbohydrates periodically throughout the week (once every 3 days for example, or once every 3 meals in the case of Jay Robb). This prevents adaptation somewhat, and allows you to get away with more fat loss than you would otherwise be able to get away with – and less rebound. You can also gain muscle on your high carbohydrate days and make some big changes to your appearance.

Re-feeders
are basically cycling calories. They may spend 5 days losing weight, and 2 days gaining weight each week. By timing your overfeeding days with a good weightlifting session and extra carbohydrates, you can ensure that more of your excess calories end up in muscle tissue than fat. By keeping carbohydrates somewhat low while doing long-duration, low-intensity exercise during the underfeeding days, you can lose more fat than muscle while underfeeding. Thus, each week you can literally gain muscle and lose fat, and do so with minimal adaptation on behalf of your body.

Intermittent fasters
are losing fat very rapidly while blunting appetite during the fasting period. Once again, this is due to big rises in catecholamines primarily. However, you’d destroy yourself in a hurry if you overdid this – and the fat loss/high catecholamine period is met with big meals and some good rest – usually following a workout in which you are burning maximal amounts of fat (towards the end of a 16-24 hour fasting period).

Then there are the
exercisers, who raise catecholamines and burn fat during exercise, and lower catecholamines and replace fat after exercise. Those who do the most exercise and rest the least, lose fat the fastest but do the most damage and cause the most metabolic adaptation. Once again, you need both fat burning/high catecholamine spurts followed with rest and rehabilitation for it to work long time without working you over.

And of course the best approach is one that combines elements of all of those approaches in a very shrewd and sustainable manner with great caution and a great understanding of both anabolism (low-catecholamine states more or less) and catabolism (high-catecholamine states more or less).

Martin does just a small amount of exercise (a few hours per week), which he times with big periods of overfeeding, including lots of carbohydrates, for maximal muscle growth following the workouts (carbohydrates, when paired with protein, provide better protein deposition into muscle cells). He has even been known to eat entire Cheesecakes at one sitting – not something you’d picture being a habit of someone with 5% bodyfat, but, done intelligently with the right timing, may actually be effective for fat loss and improving body composition.
The rest of the week, he eats a more low-carbohydrate, high-protein diet (but not ketogenic, which is important) while going long periods (16 hours) without food each day. He calls this Intermittent Fasting, but it’s not truly intermittent fasting. I would call it “decreased meal frequency,” and I suspect it would be just as effective to eat 3 meals per day spaced 6-7 hours apart (the first 3-4 hours after meals are a low-catecholamine period… after that you are burning fat – so the longer you go between meals and snacks the more fat you will be burning) as it would be to skip breakfast to increase the fasting period. It would certainly achieve some of the effects, and would be a little easier on the adrenals for those that really have issues there – which includes a great many people who have flocked to 180D no doubt.
Anyway, some food for thought for those who feel they have really rehabilitated themselves from some of their dietary and heredity follies, and are inspired to pursue a little risky narcissism.
I personally will be doing a very high volume of exercise over the summer because I love hiking (... and fishing - and I have to walk a long way to find fish as big as the one in the photo below dumb enough to go after what I throw at them), but high volume exercise like that (15-20 hours per week most weeks) is too much to attempt carbohydrate restriction or intermittent fasting with the delicate adrenals I’ve been dealt combined with the damage I’ve inflicted upon them thus far in my life.
But you can bet I’ll be having some good rest days with big calorie surpluses and unfathomable amounts of carbohydrates. This will both prevent negative consequence and improve performance out on the ol’ trail. (Note, on low-carb my hiking performance was the worst, the aftermath was the worst, but my body composition was by far the best… impressive body composition doesn’t necessarily = health).

Catecholamines - thought I was low carb "superman" but...

Each of these techniques or diets relies upon one thing – and that is a rise in catecholamines. Catecholamines collectively refer to the stimulatory adrenal hormones – mostly epinephrine and norepinephrine. But guess what happens when you chronically elevate your adrenal hormones for months on end? Your adrenal gland receptors (adrenergic receptors) tend to downregulate, and all that circulating adrenal juice starts to become increasingly ineffective.


.......or those glands themselves just get tired and start to shut down. Suddenly you start to get grouchy. Fat not only stops falling off of your body, but comes back. Your energy levels fall. Your blunted appetite becomes an insatiable appetite. And in my case, my asthma returned, I never felt rested no matter how much I slept, my skin health – once dramatically improved began to erode with breakouts here and there even while eating “cleanly,” and more.

I have written about the before and after of eating a low-carb Paleo or low-carb non-Paleo diet for going on three years now. While it is extremely common to lose weight without effort, hunger, or cravings – and have amazing energy levels to boot (and temporary alleviation of health problems), that doesn’t make it healthy, sustainable, or permanent. In what I would venture to guess is the majority of those that embark on a low-carb diet, the results are short-lived, followed by the emergence of a clusterf$%# of new health problems related to adrenal burnout, hypothyroidism, and the hot mess that stems from it. Because of the roughly 3-12 month window of tremendous vigor, vitality, and effortless weight loss that many, myself included, experienced on a low-carb diet – I have dubbed this the low-carb “honeymoon.”

I’ve received no shortage of grief from people over my criticism of the deified low-carb Paleo diet. Low-carb, and particularly low-carb Paleo which combines two ideologies, is served up in the bowels of the internet as being the underground solution to the deadly and corrupt eating recommendations that flourish in mainstream media and academia. While I have little love for Western Medicine, or the industrial health/corporate food/drug/agriculture empire, that doesn’t mean that low-carb Paleo is the great “secret” to health that has been stifled by the “man.”

Anyway, in my experience personally and in communication with tens of thousands of people all over the world for the last half decade, I can say definitively that low-carbohydrate eating, with or without the silly Paleo fungus that often attaches to the groin region of this movement (manifesting in the desire to fast even when you have signs of a low metabolism, and avoid acceptable and sometimes preferable food sources like grains and dairy products) can be dangerous.

conclusion:
In answer to the idea that we need to carefully regulate macronutrient ratios to control the function of our thyroid and adrenal glands I have only one comment for now:

Lacks biological and evolutionary plausibility.

To summarize, Matt is a clever and entertaining writer, but his main target is a straw man, as most of the science oriented paleonutrition blogs are not really "low carb" blogs at all. His observation that starch per se need not be unhealthy is not really that controversial.

Matt's claims about his own serum BG after meals should be published as a case report in a medical journal. They are at odds with clinical studies I have read on glucose metabolism in normal highly insulin sensitive young people (can you say "superhuman"?).

Matt's got some good observations, but is over or mis-interpreting the literature in the realm of endocrinology. I did not notice if he has any medical or scientific credentials, but his views of hormonal action lack nuance, to say the least. He is also avidly mining the "I feel like shite, it must be my thyroid or adrenal glands" meme.

It is very difficult to find peer review studies on thyroid function and the effects of a low carbohydrate diet. I've found a few short term studies, but nothing long term. What I'm particularly interested in is the second half of the first year - e.g. months 7-12 - and beyond. Because anecdotally, this is the time frame when hypothyroids seem to react rather poorly to a VLC diet.

I think the information available from reasonably reliable sources demonstrate that carbohydrate restriction reduces T3, reduces T4-to-T3 conversion and increases reverse T3 (rT3). The latter happens with all diets but the T4-to-T3 conversion differences I've seen reported are reductions in the 25-35% range with VLC diets.

Part of my issue with the "low carb is inherently healthy" mantra is that I see a lot of people report on discussion forums, and contact me via email or in the comments here, some serious health complications. The hypothyroids will report having symptoms of low thyroid and run to the doctor to get their meds increased.

I'm not in the business of giving out medical advice here, but on a personal level I would only encourage those with thyroid issues who experience worsening of those issues with low carb dieting to consider this: Is the diet working for you? There's more to diet than weight loss. If you are having worsening symptoms or needing to increase medications, I would suggest not. I'd even go so far as to suggest that the diet is not a healthy one for you.

Rejecting Sisson's "50-150 gm carbs" advice

Yes, you heard that right. In Mark Sisson’s book, The Primal Blueprint, he shows a little chart with carbohydrate levels ideal for weight loss, weight maintenance, and the levels of carbohydrate intake that lead to, in his words, “insidious weight gain.” Get above 150 grams of carbohydrates per day in your diet and you enter the danger zone. I have said this many times and I will say it again – in all the information I’ve ever read on nutrition and health, this could very well be the dumbest and most unsubstantiated tidbit I’ve ever come across. It is downright retarded, with 5 billion…. 5 BILLION living exceptions to the rule that a carbohydrate intake exceeding 150 grams per day triggers insidious weight gain. This is just plain stupid. I couldn’t even believe my eyes when I read it. This guy is, and should be, the laughingstock of anyone who studies obesity or nutritional science. He completely undermines his credibility as an intelligent person with this one uber-knuckleheaded and poorly-thought out conclusion.

Glucose is the ultimate source of cellular energy. Short and medium chain saturated fatty acids like butyric acid and lauric acid are the only thing that can compete. If you do not get enough glucose, stress hormones rise. At first this can feel amazing – giving you tireless energy, blunting appetite, and burning up body fat. But over time the wear and tear on the adrenal glands to produce this increased demand for stress hormones catches up with you. When the adrenal energy finally wanes you are left with lower thyroid hormone production – the adrenal hormones oppose the thyroid and even cause the thyroid gland to atrophy (the catecholamines cause the thymus – the epicenter of the immune system to atrophy as well, which would explain my observation that low-carb eating increases proneness to allergies, food allergies, and autoimmune disease).

When the thyroid is negatively impacted, the whole system goes into decline. The thyroid controls the production of hormones like progesterone, DHEA, and testosterone – perhaps the most important anti-aging hormones known. It is no surprise why it is so common for women to have reproductive and menstrual issues on a low-carbohydrate diet, especially if that is paired with a lot of stress or exercise or lack of sleep and so forth. Insulin resistance increases and glycogen storage becomes impaired. Thus, eating carbohydrates can trigger massive hypoglycemic attacks (which, oddly, often reinforces people’s devotion to a low-carb diet). In men, testosterone falls. I for one had some pretty substantial erectile problems on a low-carb diet for example. My athletic performance and recovery was at an all-time low.

The list goes on and on. To think that no health problems could emerge from eating a low carbohydrate diet is absurd. I have had plenty – from chest pains to increased allergies to foul body odor to mood disorders to digestive problems to insomnia. Hundreds of people have gravitated to this site after their health was ravaged by prolonged low-carbohydrate intake.

Lack of carbohydrate intake is just one issue with low-carbohydrate diets. Another is intake of excessive amounts of animal protein, which I have found to be particularly destructive. Animal protein concentrates highly-inflammatory amino acids like tryptophan, methionine, and cysteine. After the growth and development stage of life, unless you are trying to add muscle mass for bodybuilding, there is only a tiny dietary requirement for these amino acids to maintain lean body mass. Any excess is, I believe, a huge detriment. Eating large quantities of protein in general, particularly without complementary carbohydrate, raises the hormone glucagon as well, which triggers the stress hormone and inflammatory chain reaction in the body.

At the end of the day, while there could be some individual exceptions no doubt, a carbohydrate-based diet is vastly superior for health, longevity, and human performance – athletic or otherwise. By carbohydrate-based I don’t mean low-fat, but just 50% of dietary calories or so, maybe drifting towards 60-70% of dietary calories if you are a hard-training athlete.

Anyway, I’m done with this rant. The point of this post is very simple. There are people out there brainwashed into believing that mimicking a caveman by fasting, eating a low-carbohydrate diet with a bunch of meat, etc. is a surefire path to everlasting health and Sisson-like abs. This is false. More than that, some aspects of Sisson’s approach are causing health problems in people, even in those with seemingly-miraculous health benefits initially like those I experienced with a similar approach. Abandoning nonsensical phobias like the fear of insidious weight gain if more than 150 grams of carbohydrates are consumed is very important, and there are literally millions of people out there with low-carb-induced health problems that could be easily overcome if they were able to get past their carbophobic stigma.

More carbs bring 120% more testosterone

Martin spent a year or so on a zero carb diet. Without carbohydrates, the body has an extremely hard time converting thyroid hormones into the active thyroid hormone T3 (not referencing a Schwarzeneggar film here). Metabolism plummets, especially after the initial honeymoon period when the adrenals are still temporarily strong enough to prop up the metabolic rate, and testosterone falls with it.

Insulin converting carbohydrate into fat? That’s not how insulin works at all. In fact, a solid debunking took place a couple months back at http://www.carbsanity.blogspot.com/ in which it was shown that the body is in negative fat balance (burning more fat than storing) during postprandial insulin spikes – like the kind you get after having some good old corn starch. On top of that, the easiest carbohydrate to convert to fat has been shown time and time and time and time and time again to be the one that travels to the liver and is digested most slowly. It’s called fructose. 


Not only does the presence of fat make fat storage easier, if fructose is converted to fat in the liver (which it can be under certain circumstances) it increases insulin resistance, which can lead to increased fat storage (insulin lowers appetite and increases metabolic rate, so becoming unresponsive to the hormone has a tendency to increase appetite and reduce metabolic rate).


Insulin is also intricately tied to leptin, the master hormone of managing the calories in/calories out equation. Surges in insulin cause surges in leptin, which lowers appetite and increases the metabolic rate. Stating that making insulin rise leads to becoming fat is a complete misrepresentation of the bigger picture. In fact, starch-based diets usually lower appetite dramatically, and many starchy foods like potatoes and oats are known to satisfy the appetite on fewer calories than just about any foods known (higher “satiety index”).


Speaking of corn starch specifically, this has actually been used successfully by Francine Kauffman of the American Diabetes Association in the prevention of early morning hypoglycemia in diabetics – more evidence that absorption rate is not the prime determinant of whether or not a particular carbohydrate goes on to trigger hypoglycemia and general blood glucose dysregulation.


Anyway, don’t get the wrong idea here. I’ve been eating simple sugars in favor of starches myself for many months now and have noticed some apparent benefits. Many seem to do better with sugars than starches for keeping hands and feet warm, producing more energy, getting better sleep – probably due to enhanced liver glycogen storage, and so forth. Many fare better from a digestive standpoint on fruit, juice, and sugar than more complex carbohydrate molecules. Some even report a lowering of appetite on sugar vs. starches, especially with the consumption of whole fruits which, like most starchy staples, are very high satiety index foods. Fruit is also generally more nutritious and hypoallergenic.


So be open to either, or a combination of the two. It’s up to everyone to experiment for themselves to see what the relative benefits and drawbacks of the two basic types of carbohydrates are. But the point here is to shoot down Peat’s wacky and erroneous biochemical justification of the outright superiority of sugar over starch. There is not a clear cut right or wrong carbohydrate, and the mainstream belief that “complex” carbohydrates are superior to simple sugars is not the result of a governmental or agribusiness conspiracy.


In the next episode, we will continue looking closer at Ray’s cookie-cutter and false portrayal of insulin as being a hormone that, if driven up, will drive blood sugar down and cause hypoglycemia. Don’t worry, Ray’s got some tremendous gems in this article as well, as he is one of the few that actually does have some understanding of type 2 diabetes, realizes that it is a shortage, not a surplus of glucose at the cellular level, and so on.

Low Carb Diet Myths, Low Carb Diet Dangers


The world is drowning in low carb diet plans. Low carb fever has swept the nation, and perhaps the world. If anything, with #1 documentary films like Tom Naughton's Fat Head and groundbreaking books like Gary Taubes's Good Calories, Bad Calories, the low carb diet has done nothing but gain steam since the days of Atkins. 

This, in part, is a beautiful thing. The low carb diet masters of the universe have indoctrinated the public with a totally different portrait of what causes obesity, heart disease, cancer, Alzheimer's, and many other conditions. Thank God! That saturated fat causes heart disease thing was starting to get really old, especially after the whole saturated fat and cholesterol theory (the lipid hypothesis) was disproved decades ago. 

But is the low carb diet the answer to humanity's ills? Was Atkins really right about everything? 

Not a chance! Carbohydrates cause obesity, diabetes, and heart disease?! Holy "fat causes obesity, diabetes, and heart disease" that is dumb. Tell that to all the lean people prior to the 20th century all over the world that were not overweight, did not have heart disease, and ate more carbohydrates with each meal (sedentary or active) than the typical low carb diet plans allow for the whole week. 

Or as I like to say: Fat kills? Carbs? What next, air?

Low carb, low fat, low calorie, vegetarian - although they seem very different, they have one thing in common. They are all wrong! More wrong than fornicating with a family member!
The low carb diet myths run deep. It is a "revolution" based on the idea that carbohydrates raise blood sugar and insulin, and insulin makes you fat. High levels of blood sugar and insulin ARE the problem, but that is not caused, in any way, by the ingestion of carbohydrates. Fat chance. In fact, eating unrefined, wholesome, natural carbohydrates can lower blood glucose and insulin levels to normal.

Renowned researcher Denis Burkitt noted this easily observable phenomenon:
"It is of interest that diets high in fiber-rich cereals and tuberous vegetables tend to result in an improvement in basal blood glucoses."

Dr. Joel Fuhrman, who is blinded by dietary dogma of his own (low fat vegetarian, dumb, dumb, dumb), at least gives a good critique of low carb diet myths in Eat to Live:
"So, it is certainly true - as the advocates of animal-food-rich diets, such as Atkins, Heller, Sears, and other proclaim - carbohydrates drive up insulin levels temporarily. These writers, however, have not presented the data in accurate fashion. A diet revolving around unrefined carbohydrates (fruits, vegetables, whole grains, and legumes) will not raise blood sugars or insulin levels. Studies have shown that such a diet can reduce fasting insulin levels 30-40 percent in just three weeks. Obviously, a low-fat diet that is high in refined sugars and refined carbohydrates and low in fiber is not a healthy diet. To lump refined and unrefined carbohydrates together is inaccurate and misleading."
 There are even some low carb diet dangers that dieters need to watch out for. Despite fantastic initial results on a low carb diet - the low carb honeymoon period I call it, a diet too low in carbohydrates long-term can make you more insulin resistant, slow down your metabolism, raise cortisol levels, trash your digestion, wreak havoc on your emotions, and more.
 
Low carb advocate Ron Rosedale thinks slowing down your metabolism for example is a good thing. That's why I call him Wrong Rosedale. 

In fact, almost all of the low carb diet dangers stem from this basic phenomenon. A high metabolism is the human being's greatest protector from heart disease, diabetes, cancer, and infectious illness. A low metabolism is its greatest burden. Over the long haul, no matter what your "metabolic type" or "condition" may be, the low carb diet that is truly TOO low in carbs can be counterproductive, burying you in a low carb prison that is difficult to escape from.
